I'm one of those people who likes to get started on the day right away. I usually have the most energy when I first wake up, and I definitely don't like to squander it because who knows if a power nap will be calling me by mid-afternoon! ;) So I want a filling breakfast, but not one that requires much (any?) effort or time to prep. Chocolate overnight oats are my answer.


This is how both Scott and I jump into each and every day (he's a chocolate fiend, which is why I created this soap bar), and it's been both a filling and yummy way to kick off the morning for years now. I prepare a fresh batch daily, refrigerate it until the next, and we're on an endless cycle of oats! If I'm being honest, our breakfast bowls are never as pretty as the one pictured above (although I kinda wish they were...), but it's another one of those things I don't really want to spend the time on. I simply top mine with a couple heaping tablespoons of soft and healthy hemp seeds, whereas Scott doesn't bother to adorn his with anything. Go crazy or go plain—either way is delicious!


Ingredients

  • 1½ cups organic rolled oats

  • 3 tablespoons organic almond butter

  • 3 tablespoons organic cacao powder

  • 7 organic Medjool dates

  • 2 cups plant-based milk or water


Directions

  1. Pit and soak the dates in hot water for 10 minutes or so to soften. If your dates are nice and soft, then this step is unnecessary.

  2. Add the oats and cacao powder to a container (that you can cover) and stir to mix.

  3. Chop you dates into bite-sized pieces; add both the dates and the almond butter to your oats.

  4. Pour in the plants-based milk (or water) and stir to thoroughly combine. Cover and refrigerate for at least 4 hours, but I prefer overnight.

I used to make this with plant-based milk but eventually ditched it for water when I realized it tasted just as good! Plus, I make my own milks and so that adds time to the prep that I'd rather spend on something else... like a blog post. Or making soap ;)


Cocoa powder can be used in place of the cacao powder, I simply prefer the extra antioxidant punch of less-processed cacao.


And that's all she wrote for today, friends. ! I do have a vanilla version of this that I'll share somewhere down the line but for now, enjoy the chocolate :)
